Ethiopian Seasoning 
‘Berbere (bärbäre) is a chili-based versatile and a signature seasoning in the cuisines of Ethiopia and Eritrea. Serves as potent with complex flavor, offers a balance of heat, warmth, and earthy notes. Used to season Ethiopian dishes like stews or lentils, grilled meats, roasted vegetables, dips and sauces, or sprinkled on dishes at the table. 
Ingredients:
Red Chili powder, Paprika, Onion, Coriander, Cumin, Cardamom, Ginger, Cayenne, 
Fenugreek, Garlic, Salt, Cinnamon, Allspice, Cloves, Nutmeg.
To Make ‘Berbere Sauce’ for Ethiopian Dishes:


Fry a finely chopped onion in 1tbsp oil, with1tsp of mild paprika and 3tbsp of the dry ‘Berbere spice mixture. Fry for five minutes and either use immediately or allow to cool and refrigerate for up to two weeks for later use.
Recipe for Ethiopean Spiced Butter (Niter Kebbeh):
In a large sauté pan mix in ½ cup unsalted butter, 4 garlic cloves, halved, 3-inch piece ginger, peeled and sliced, 1 jalapeño, halved, 1tbsp ‘Berbere’ spice mix, cook over low heat for 15 minutes, remove from heat and set aside.
