‘Bijol’ is seasoned annatto seed (achiote) powder, used as a coloring and seasoning condiment. Widely used in Latin American, the Caribbean and the Philippine cuisines. Also added to flavor Cuban dishes.
Mostly used for coloring rice. It is ideal to add to the marinade for grilled or roasted meat, fish or chicken. Great for paella, soups, stews and pasta.
To use bijol as a liquid "color substitute": Bring 1/4 cup water about 1 tablespoon Bijol to a boil and reduce by half.
Ingredients: Corn Flour, Cumin, Annatto, Food Color (Yellow No. 5 and Red No. 40)
