File Powder (Gumbo File), the dried and powdered leaves of the sassafras tree. It has a delicate but distinctive texture, earthy flavor and thickening characteristics.

Used to thicken a traditional soup/stew called Gumbo, a spicy & rich Creole and Cajun dish. Use only ½ tsp per quart of soup and should only be stirred in at the end of cooking.
