This special pearly white medium grain rice is commonly known as Idli rice, grown in India. Use to make tasty, soft and fluffy idli, a type of savory rice cake, popular in southern India and northern Sri Lanka.
For making Idli: Use 2 cups of Idli Rice to 1 cup Urad dal.
Sample recipe to make Idli:
Soak for 6-8 hours and grind 2 cups of Idli rice & 1 cup of Urad Dal, separately into a smooth paste. Mix them, add salt to taste, set aside for 12 hours, in a warm place. Place the mix (batter) into Idli moulds, then steam them in the Idli cooker for 15 minutes or until a toothpick comes out clean. Let cooked idlis to sit for 5 minutes, then serve hot with coconut chutney.
