Khichdi Mix (Khichri / খিচুড়ী), Rice & Dal Mix
Khichdi is Indian and Bangladeshi special comfort food prepared from Indian Basmati rice, Moong dal, Masoor Dal & Moong Split dal. Cooked as a rather rich gourmet delicacy, light and nutritious dish and easily digestible.
Simple Preparation: Heat 2 tbsp ghee in a pot, cook 2 tsp ‘Khichadi Spice Mix’ until spices release aroma. Add 1 cup washed & soaked rice and dal mix, stir, add 4 Cups of water or stock, 2 cup chopped vegetables, bring to a boil. Cover and simmer for 30-40 min. or until stew-like consistency (add more water if needed). Add salt to taste, garnish with squeeze of lime and chopped fresh cilantro, serve warm.
