Methocel® F50 is "F" Grade, Cold water soluble, Hydroxypropyl Methylcellulose, commonly used as binder, film former, or suspension aid. Creates a semi-firm gel, very low viscosity for thickening.
Used to prevent weeping and phase separation, improves tenderness in baked goods, adds mouthfeel to low fat foods. Excellent for making foams, puddings, and whipped toppings.
F50 forms a semi firm gel at 62C (143F) - 68C (154F) degrees. It yields a viscosity of 50 cP at 2% in water.
