Turbinado sugar is less refined sugar, produced by evaporating the water out of first-pressing sugar cane juice (retains more of the plant's flavor and natural molasses).
This syrup is then boiled until it thickens and crystalizes, then spinning the resulting crystals in turbines (hence called ‘Turbinado’) to dry them.This process removes some of its molasses content, but not all of it, resulting golden-brown large sugar crystals.
